Laura’s Famous Soup

2 cans Great Northern beans, rinsed and drained
3 chicken breasts, boneless/skinless
1 16 oz. container fresh, refrigerated salsa
1 can mild Rotel
2 32 oz. cartons reduced sodium chicken broth
2 tsp. Cumin
1 1/2 tsp. Chili powder
1/2 tsp. Garlic powder

Boil chicken 15-20 minutes until there is no more pink and cool. Shred chicken and combine with all ingredients in a large stockpot. Bring to a boil. Reduce to simmer and cook for a minimum of one hour. Serve with reduced fat cheese and sliced avocado (optional).

6-8 servings
230-300 calories per serving, depending on toppings
7.4 grams of fiber
